Mint Chocolate Chia Seed Pudding from What The Fork Food Blog

This Mint Chocolate Chia Seed Pudding is healthy enough for breakfast but decadent enough for dessert! It’s rich, creamy, full of chocolate and mint flavors and it’s gluten free, dairy free, naturally sweetened.

INGREDIENTS


  • 1 C coconut milk, (I used leftover canned coconut milk)
  • 2 Tbsp chia seeds
  • 2 Tbsp cocoa powder
  • 2 Tbsp raw honey
  • ¼ - ½ tsp peppermint extract
  • chocolate shavings, optional
  • INstructions

    1. Add the coconut milk to a bowl and mix well. Add the chia seeds, cocoa powder, honey and peppermint extract and mix well. I started with ¼ tsp peppermint extract and wanted more peppermint flavor so I added another ¼ tsp.
    2. Once everything is mixed, cover and refrigerate overnight or up to 2 days. Stir the chia pudding occasionally in case any chia seeds settle on the bottom.
    3. To serve, garnish with chocolate shavings if desired.
