This apricot smoothie has just 5 ingredients and the last one is optional. It’s so easy! It has just the perfect amount of sweet-tart flavor and the strawberries really enhance the yummy apricot flavor. My husband came up with this smoothie. It is a healthy, energy boosting drink loaded with Vitamin’s A & C with a good dose of fiber. Yum!
Ingredients
1 cup cold coconut water, or cold filtered water
1 cup strawberries, hulled (you can sub for 1 cup blueberries)
2 cups (about 3/4 lb) apricots, pitted
1 cup frozen pineapple
1 tsp flax seed oil (optional – adds a nice punch of Omega 3)
